
1/4 C onion, minced
1 tsp garlic, optional
3 chicken bullion cubes
4-6 C water
1 C baby carrots, sliced in half, lengthwise
3 small potatoes, diced
1/2 C celery, sliced
1/4 C cabbage, sliced, optional
4oz whole wheat or multigrain pasta
1 Hillshire Farms Turkey Polska Kielbasa, sliced
1 can Great Northern beans, drained

Add minced onion and garlic to pot, let cook 4-5 min until translucent. Watch it or it will burn! Add bullion cubes and water. Add carrots, potatoes, celery & cabbage. Bring to a gentle boil. Lower heat, cover and simmer until vegetables are tender. Bring back to boil, add pasta, cook according to package directions until pasta is tender. Just before serving, stir in sliced kielbasa & drained beans. Allow to heat through. Serve with grated parmesan cheese a dollop of plain greek style yogurt. WW points value - 4 not counting the cheese and yogurt topping.
This was a recipe borne out of dinner desperation. Luckily, it was a hit. My kids devour this. It is WW points friendly and loaded with veg and fiber. It is also equally as delicious heated up the next day for lunch. Enjoy!
If you click on the photo and enlarge it, you will see no baby carrots. I didn't have any. But the soup was still delicious.
